Simple, tasty, and full of cheesy deliciousness, this cheesy potato casserole is a holiday favorite in my home – but I love to sneak it year round!



  • 6 medium russet potatoes
  • 1/2 cup sliced green onion
  • 1/4 cup butter
  • 2 cups sharp cheddar cheese, grated
  • 2 cups sour cream
  • Salt and pepper to taste
  • Chives for garnish (optional)


  1. Boil the potatoes for 10-15 minutes, until soft on the outside but still a tiny bit al dente on the inside. You don’t want them completely falling apart, remove from boiling water and wait until they are cool enough to handle
  2. Once cooled, peel and coarsely grate the potatoes on a box grater using the large holes
  3. On the stovetop in a large skillet melt the butter and briefly sauté the green onions
  4. Add cheese and stir until melted and incorporated
  5. Fold in the sour cream and stir until well blended with the cheese and onion mixture
  6. Add the potatoes and gently mix until evenly combined. Add salt (I use about a teaspoon)
  7. Turn into a well-greased baking dish
  8. Bake at 350 until heated through and lightly browned on top, about 30 minutes. Garnish with fresh chives
