Building off the southern recipe category that my Paleo fried chicken seems to have started last week, I present this homemade pimento cheese recipe to you. Sharp cheddar, slightly sweet pimento peppers, a confetti of red onions, a hint of dill, and just enough mayonnaise to hold it all together, this pimento cheese is the spread you need for every party.
Pimento cheese is having a **moment** and I am here for it. A longtime lover, I’ve waited patiently for the rest of the country to catch on. No longer simply a southern menu item, pimento cheese has gone national and I couldn’t be happier. I order it anytime I see it on a menu, and am always looking to try new versions of it.
The version I fell in love with during my time in Washington, DC was actually the Whole Foods prepared foods section version of it. Something about the just-right amount of red onion for crunch and the wispy herbaceousness of the dill made it exceed the already lofty heights that pimento cheese soars to.
You have to be careful with the grocery store versions of pimento cheese in most cases. Often over-sweet and elementary school paste-esque in texture, they can be full of nasty ingredients and candidly not taste great. I think the key to great pimento cheese is a truly sharp cheddar cheese, as that bite holds up to any subtle sweetness from the peppers themselves. And of course, no added sugar for the love of all that’s holy.

- 12 oz extra sharp cheddar cheese, grated
- ½ cup mayonnaise
- 3 tablespoons finely diced pimentos
- 3 tablespoons very finely diced red onion
- 1 teaspoon dill
- 1 small clove garlic, finely grated
- Mix all the ingredients together in a bowl
- Let chill 30-60 minutes before serving for best results
