These Paleo peach creamsicles are a super clean, best-of-the-season sweet treat to cool you off while summer blazes in all its glory!
This blog has been woefully without a dessert until this very moment. Shame on me! Though I’m a gal who prefers a savory dish any day of the week, life should not be enjoyed without a sweet treat here and there. Fruit desserts are some of my absolute favorites (did someone say cobbler or crumble?), but with heat indices maxing out everywhere, I wanted something that would cool us all off while we indulge.
Somewhere, somehow, the notion of a creamsicle dessert came to me, but I decided to use peaches instead of the classic oranges because stone fruits are in season and when the peach tree is producing, it can be hard to keep up with all the glorious bounty! These Paleo peach creamsicles are ridiculously easy to make and will please both you and any kiddos who are hanging off your arm hoping for one of their own!
Unlike some popsicle recipes that have gorgeous swirls or suspensded ingredients, this one doesn’t require multiple freezing steps. The densities of the peach mixture and the coconut cream are balanced enough that you can layer and swirl them all in one process, then pop into the freezer for several hours. Set it and forget it, as the annoying infomercial used to say!
To make the peach puree, I like to start by scoring my peaches on the bottom with a small x then pop them into boiling water for 15 seconds. Once removed, they are incredibly easy to peel. A quick 1/2 inch chop of the peaches and into the blender they go with 2 teaspoons of honey (you can add more or less depending on how sweet your peaches are. Cook by taste here, people!). Stir in the lemon juice and set aside.
Coconut cream works the best here because it’s a bit thicker than coconut milk, and has more of an ice cream consistency when frozen. Simply mix in the remaining 2 tablespoons of honey to the cup of cream (again, you can adjust to use more or less depending on your preferences for sweetness) and voila, you’ve made all the ingredients for these Paleo peach creamsicles. Gosh, that was easy.
Now simply set up your popsicle molds (I like these ones), and in alternating layers add the cream and peach. Give each mold a good swirl with a popsicle stick to create some good marbling. Thinner layers of each liquid will help make this an even easier process. Freeze for about 4 hours and find yourself in popsicle heaven!

- 3 large, ripe peaches (or 4 medium)
- 2 tablespoons plus 2 teaspoons honey

- Mix the remaining 2 tablespoons of honey with the coconut cream
- Pour alternating layers of peach mixture and cream mixture into your popsicle molds. Give each one a good swirl with a popsicle stick to create a nice marbling
- Place a stick in each popsicle holder and freeze for at least 4 hours
